This article is specifically targeted to those women like me that feel like there's not enough time in the dang day to get everything done! Feel free to comment, share recipes, or just vent. ☺

I will refer to myself as the "fat kid" once in a while, but it's not intended towards anyone else.

I work full time as a prototype mechanic [that's my label at work anyways]. In reality, I am a Process Auditor/Writer, Admin, Payroll for our shop, part of a Proposal Team, and all around "representative" for our shop. I have 2 kids. A 3 yr old son and an 8 yr old daughter. My husband and I work together and we live 25-ish miles from work. So, 40hrs/wk plus the added 1.5hrs of travel time/day, and the time it takes to pick up kids from daycare/grandma's, we're lucky to get home before 6p and we are leaving our house in the morning at 6:30a. My weekends are spent doing the larger cleaning jobs that I can't get done during the week... And for entertaining and playing with the kids. Sometimes I can convince them that it's fun to scrub the kitchen cabinets [with me].

We live in a house that is more than 100 yrs old. So, yes... We have to do home improvements regularly and repair things that are simply worn the f out.

Do I WANT to cook? Not really. The kids always complain about what I make... I could make banana splits and they'd tell me they wanted just chocolate ice cream. My daughter takes so long to eat ANYTHING, we feel like we're there for eternity. My husband tells me that he would like to eat healthier, so I go and shop for the healthier things and he says, "Where's the frozen burritos that I like?" And then most of that fresh stuff that I bought for the family to eat goes bad and gets thrown away because I can only eat so much lettuce, carrots, apples, grapes, etc by myself.

I'm the only one in my house that is even remotely overweight. My husband is 6ft and [on a good day] 150lbs. My daughter's pediatrician gave me a list of what to ADD to her diet to help her gain some weight because she's UNDERWEIGHT. My son is a toddler... He burns it off in school. He is built like me though... Heavier on the bottom. :) It's cute on a toddler. Not so much on me and my purple veined knees and ankles, and cellulite thighs.

My issue here is, because my family is SO very different from me, as far as nutrition needs go, I'm stuck. Lack of time, energy, not wanting to deal with the whining and complaints, and finally... The icing on the diet cake... I've changed my eating habits for the better for more than a year. Exercised correctly for my joint issues. And still.......... Not a pound/inch/tightening... Nada. Nothing. I don't drink pop hardly ever. I drink coffee with non-dairy creamer. No sugar. No faux sugar. I don't eat many sweets. I prefer popcorn over a candy bar any day. I drink a lot of tea and water. I eat whole grain pasta, brown rice, and whole grain wheat bread. I love yogurt with a little granola [even though my husband doesn't love me later after eating that]. I DON'T GET IT.

The only thing that I might be able to attribute to my keeping lbs on... MAYBE... My sleep disorder [Idiopathic Hypersomnia]. But the medication I'm on to keep me awake during normal hours, is a prescribed speed. You'd think I'd lose weight while on it.

What are your thoughts?

MsA, thanks for the first contribution to the group! I can commisserate with what you are up against, and all I can ask you is have you spoken to your doctor, or read the side effects on the medicine that you are taking? Some meds make it so that you can't lose weight, or even GAIN weight no matter what you are do. But know that by eating healthy meals, and trying to instill healthy eating habits in your children, that you are doing what you need to be doing. And when you play with your children, try to make it activities that get you all moving! Good luck!

Oh... Yes, I know the possible side effects. None have anything to do with keeping weight on or gaining.

I love playing "Just Dance" on the Wii with my daughter... She gets mad though because I usually beat her at it. I'm just trying to keep moving. I don't care what the score is. It's FUN exercise!

    Sigh -- my I don't wanna's are a mile long. I get home around 5pm, and on weeks that I have custody, my dad watches my daughter between the time she gets off school and when I pick her up. Is it too much to ask that homework be done, neatly, by the time I get home? I mean 2 hours may not sound like a lot, but when he isn't enforcing the "no TV until homework is done rule" it is FRUSTRATING!! Especially when he just takes her word that homework is done. When I look at it, it is sloppy, incomplete, and unacceptable. She knows better...and HE knows better!

    By the time I get home, I wanna just relax, maybe microwave something (ok, ramen or spaghetti if I'm having a good day at work, which is rare), but more often than not, I have to fight with her to redo her sloppy homework, with her screaming that neighbors can hear and they must think I'm beating her instead of just trying to make her do homework! By the time that's done, it's time for bed and NEITHER of us have eaten unless we get drive through on the way home and eat before homework. It's gotten to a point where I am stopping caring about sloppy work as long as it's done, which isn't right either, but it's better than nothing being turned in!

    Sorry this isn't much about food, but I'm getting tired of all this fighting (and that doesn't include fighting with the grandmothers over not being a good enough mother, even though daddy doesn't do @!$%#!!)

    belle, I understand completely what you are dealing with. My ex-husband has primary custody of my 11 year old son, and our rules seem to be completely different when it comes to homework, games, etc. I see my son on Thursday evenings and it is ALWAYS a battle when it comes to getting him to do his homework and to do it neatly! And it doesn't help that his father and step-mother seem to think that I am the most evil person on the face of the earth. It can be VERY FRUSTRATING, but know that you are doing the best you can with what you have to deal with. ((BELLE))

    Ladies... I'm SO dealing with the same. The ONLY fortunate thing for me is that my mother does make my daughter do her homework right away. The only night I have to worry about her and her homework is when it's a math assignment. My mother is HORRIBLE at math and she's not good at dealing with a child that needs help with it. My stepdad was the one that helped me with math because he didn't have a temper about it and he was able to better understand it.

    Yeah...I'm on call even on my non-custody weeks for math help. I may be a bad mommy, but sometimes when I see it is the other grandma (his mom) calling, I let it go to voicemail on purpose just because I don't want to deal with it. Hell, non-custody weeks means it's my time off! What if I was away on a vacation that week?

    We can't feel bad for not being there to help our children 100% of the time. How can we expect them to grow up to be functioning adults if we don't allow them to do things on their own. To learn from their mistakes. To be able to make decisions for themselves. I have been told that my children are very mature for their age, because they know how to think for themselves.

    of course, I was a mean mommy and used my daughter's Amazon gift certificate to buy a kindle book for her without asking -- but she wants to see the new Studio Ghibli film the story is based on and it was only $1.59 so even if she doesn't want it, mommy does and I'll just repay her...just like I have to already on other things I've bought through Amazon since I've already input her certificate and I can't get around paying with it :P

    I don't know...I thought she'd like the Sisters Grimm series since we watch OUAT together, but it isn't engaging her like I thought it would. I remember reading Borrowers growing up and it began kinda slowly, so I'm not sure if it will capture her attention. Then again, I'm not being a SUPER mean mommy and saying she has to read the book before we see the movie either...

    I LOVED the Borrowers growing up. And I would encourage her to read. My youngest son loves to read. He's read the entire Harry Potter series.

      Potter is a decent series...books are a bit long though, especially towards the end (300 page book vs 700+ page book is a HUGE difference to a kid!) I like the Artemis Fowl series, Percy Jackson series (as well as the "new" Percy series), Kane Chronicles (same author as Percy Jackson but deals with Egyptian mythology instead of Greco-Roman mythology)...my mom's a school librarian so she hooks me on a bunch of kid series :P

                  nah...it's my way to pay the least amount, plus they have a little header that shows if the price changes on anything in the cart, so it's easier than checking each item separately :P

                  obsessive is me checking the goldbox and lightning deals for things I want...and the kindle deal of the days :P

                        I've got some leftover chicken in the fridge, so I'm going to throw together a quick stir fry.

                        Sliced onion, minced garlic, broccoli, cauliflower, carrots, chicken and chicken broth.

                            Belle, it's NOT that much work. The biggest effort is slicing the onion and mincing hte garlic.

                            The veggies, I buy frozen, so they are already chopped.

                            All I do is heat a skillet, spray it with pam, throw in the onion and garlic and cover it. Wait about 5 minutes, and add the veggies and precooked chicken and a splash of chicken broth. Wait another 10 minutes and it's done.

                              exactly! my veggies are all pre-cut and frozen. I have broccoli, peas, and corn in the freezer right now, $1 per pack on sale :)

                              stuff that goes bad I just don't buy because I never use it in time -- that's the reason I get those little wine bottles that only have 1 glass in them...enough for me! :)

                              Well, the corn that I have in the freezer is from my mom's garden last year. But yeah, I have broccoli, corn, mixed veggies of all types. Then I can just dump out what I need and cook them.

                                I love the convenience of frozen veggies. You don't have to worry about spoiling and I heard they are actually better for you than produce you get at a grocery store. Something to do with freezing right after harvesting. Also, you don't have to worry about so many other people that handle them in the store. I saw a woman once sneeze in her hand then pick up an apple, look at it and put it down. Yuck. I wash like crazy but sometimes it's hard to make sure it's clean. Like broccoli. And I hear you're not supposed to wash peaches, but I do anyway. So I buy frozen whenever I can.

                                belle I'm with you on the wine. Most of the time I'm the only one in my family that drinks wine and it's nice to have just the right size amount.

                                SC, for the most part frozen veggies aren't processed as much as canned, therefore they hold more of their nutritional value. However, if you take a frozen veggie and cook it to death, you might as well eat it out of the can.

                                  I'm simi-retired and I haven't had a gig in six months. But last week my "boss" called and offered me a consulting job. When I went to look at my work clothes I was a little shocked to find they are all very tight. Stepped on the scale and what do you know. I'm twelve pounds heaver than I was last summer. YUCK! I can barely get into my work clothes, which are all the same size. I don't want to buy new clothes but I'm going to have to. I can't loose that weight between now and Monday. Dang! I wear sweats and old jeans around the house that I bought a long time ago when I liked to buy jeans that were a little loose for the sake of comfort. I did notice that those old jeans were fitting less loose and that my thighs have started to touch. But I chalked it up to just getting old (I'm 50). I really hate buying new clothes.

                                  Well, here is what I'm going to do about it. First, cut a lot of carbs. My husband lost nearly 60 pounds on the Atkins so something must work there. No rice (easy, I hate rice anyway), no pasta (a little more difficult but doable), and bread (very difficult but I'm going to try). Second, more veggies, especially green. And a lot of chicken breast. I don't eat fish and I'm not big on sweets except dark chocolate. Third, since I'm going to be traveling and living in a hotel for the next three months, I'm going to buy a really good work out video. Maybe Zumba or Hip Hop Abs or something like that.

                                  So, here are some questions. Has anyone used one of those videos and did it work? Has anyone lost weight while traveling and do you have tips for me? And finally, does anyone have any good recipes for chicken breast? I need a big variety.

                                  SC, I am currently using the Weight Watcher's Stability Ball and DVD about 3 nights a week. I am seeing results, between taht and watching what I am eating. Not to mention, I have stairs in my house, so the nights that I don't do the DVD, I usually try to RUN my stairs at least 10 times! That is something that you could also do at the hotel, plus if they have a pool, you could always swim laps. And as far as eating choices, sounds like you have a firm grasp on what you need to do, just when you are eating out, go for broiled, baked choices, or vegetarian dishes that aren't loaded up with high calorie sauces. Also, you might want to limit your fat intake - watch the cheese, sour cream, butter, cream, etc. It will help.

                                  I have a TON of chicken recipes. I'll be back to type them up. Now that I have a husband that helps around the house, I don't mind cooking quite as much as I used to, but it's a time issue more than anything... And the fact the kids bitch about everything I make. I've "tested" new recipes on my husband a lot. He's honest with me about it too.

                                  I have a few salmon recipes too. I never liked fish until I got pregnant with my son... And I still don't like most fish, but I got a couple recipes from my old sitter's husband [a chef].

                                    Ok first I'd like to say, I am a person that needs to have quick as possible assembly simply for time issues...

                                    Chicken Recipe #1 - I call this one Southwest Chicken Casserole.
                                    You can use left over chicken breast, 2 cans of precooked chicken, or raw chicken breast. The big difference is how long you'd need to bake it for the raw. I prefer to use precooked of some sort. If you're using non-canned, use 1/2 a breast or whole if you prefer more chicken... It's a to taste thing really.

                                    Get a casserole dish [sized appropriately depending on how much you want to make].
                                    Chicken - skinless, boneless, breast meat
                                    Mix 1C of low fat sour cream with taco seasoning [to taste].
                                    One can of Cream of Chicken Soup. 1/2 Can of water.
                                    One [12oz] box of whole grain wheat pasta [you can leave them raw - just have to bake a few extra min].
                                    1/2C [roughly] of shredded mexican/taco cheese.
                                    1/3C [roughly] of bread crumbs if you like the top crispy.

                                    Mix your sour cream, seasoning, and soup.
                                    Add the chicken and mix.
                                    Add the pasta and mix.
                                    Get it level - ish in the casserole dish.
                                    Add your 1/2 can of water.
                                    Sprinkle cheese to taste.
                                    Sprinkle bread crumbs to taste [if you want to use them].

                                    Bake @ 350 for 1.5hrs if you use raw chicken.
                                    Bake @ 350 for 1hr if you use raw noodles, but precooked chicken.
                                    Bake @ 350 for 20-30 min [cheese is melted and golden] if you're using cooked noodles and chicken.

                                    Chicken Recipe #2 - I call this one the Poor Man's Pot Pie
                                    Again... A casserole. ☺
                                    Precook [bake] the chicken if you don't have any leftovers or canned for this one.
                                    Frozen or canned veges [whatever vege you like]... I'm sure you can use fresh, we just don't have fresh very often.
                                    Season to taste.
                                    1 Can Cream of Chicken Soup
                                    1/2 Can water
                                    5 biscuits cut in half [and if you're trying to cut breads, just don't eat this part]
                                    French Fried Onions to taste.

                                    Mix your chicken, soup, veges, and water in casserole dish.
                                    Sprinkle the French Fried Onions on top.
                                    Lay the halved biscuits on top.
                                    Bake @ 375 for 20-25 min [until the biscuits are golden brown].

                                    I also like to add chicken to Green Bean Casserole to make it a meal.

                                    For my favorite SALMON recipe...Preheat oven to 350.
                                    Get oil smoking in the pan. You might need to take the battery out of the smoke alarm... I always have to.
                                    Pan fry fresh/previously frozen salmon in oil of choice [I use Olive Oil]. For 3-4min per side. Don't descale if one side still has them.
                                    Season with Cajun Seasoning [to taste].
                                    Bake salmon in the oven for 10-12min.

                                    That's it.

                                    I like to put seasoned green beans as a side OR Red Beans and Rice [but you mentioned not being much of a rice lover].
                                    I would think that seasoned lima beans would be yummy with it too. I like beans. ☺

                                        Now, on to my list of IDONWANNA'S!

                                        I am a single mother of two boys, one lives with me (he's 18), and we live with my SO. He and I both work full-time jobs, and he gets up at 3:45 to go to work - I get up with him. I usually TRY to go back to sleep after he leaves for work, but that doesn't always happen. Therefore, usually by the time I get home from work, I have already been up for 13+ hours and I still need to make dinner, do laundry, dishes, clean the bathroom, run the sweeper, etc. But one thing that I have to remember is that your typical "housework" burns over 200 calories in 30 minutes. So, if it takes me an hour and 10 trips up and down the stairs carrying crap that needs put away, I figure that I've had my workout for the day. I'm getting better at eating healthier, my typical day is oatmeal for breakfast, soup for lunch, carrots for a mid-afternoon snack, and then either a salad or a light stir fry for dinner. But there are those times when I would love nothing better than a huge baked potato loaded with butter, sour cream and CHEESE! I have yet to break down and have that YET, but I know the day will come, and taht drives me CRAZY!

                                        I feel that you still need to indulge on occasion. Otherwise you'll cave one day and eat all the stuff that you've been avoiding... That gives the yo-yo effect. We ALL know that one, I'm sure.

                                            Those are good too. I like my fries crispy... Not soggy. ☺
                                            My big problem with fries is that I like to dip them in a mix of mayo and ketchup. The mayo is not so good for someone that wants to lose 10-15lbs.

                                              I like mine covered in SALT, but I don't use ketchup on them. If I dip them in anything, I like to dip them in mustard. :D

                                                hmm...what about doing chores in the morning (the non-cooking ones of course) after you send your son off? the dishes can soak overnight so you can do them in the morning, then let them drip dry while you're at work

                                                  My son leaves after I do. And I only leave myself enough time in the moring to get a shower adn do my hair and makeup before I leave for work. I have to be here at 7:15.

                                                    OK, here's what I made for dinner last night:

                                                    Chicken Stir-Fry

                                                    1 medium onion, diced

                                                    3 cloves garlic, minced

                                                    1 medium bell pepper, diced

                                                    1 can mushroom stems & pieces, drained

                                                    1 bag california blend veggies

                                                    1 chicken breast (precooked and deboned) or 6 boneless, skinless chicken breast strips

                                                    1/4 cup chicken broth

                                                    Coat large skillet with Pam, and heat over medium high heat. Add green peppers, cover and cook for about 4 minutes, add onion and garlic and cook an additional 4 minutes, add mushrooms and cook about 2 minutes. Add vegetables, cover and cook for 5 minutes, add chicken and chicken broth and cook till heated thru (if using the precooked, if using raw, I add at the same time as the vegetables)

                                                      You're nicer than I am... I would just set em aside and if my husband wants em [cuz he and my son love them] he can sautee and eat them. I can't even smell em without wanting to yack.

                                                          My mom used to try and hide them in spaghetti sauce because SHE likes them... She would pulverize them... I still tasted them and refused to eat it. No one will EVER trick me and my taste buds.

                                                          One time, my ex had made a big [4 liter] batch of iced tea. He and I both drank a lot of it. I just like mine plain. No sugar. No lemon. No added flavoring... He can ADD that stuff. You can't remove it. So, I asked if it was made the way I like it. He had said yes. So I poured myself a tall glass and took a big gulp. I spit it out in the sink and poured my glass out. I yelled to him, "Are you SURE no one has put sweetner in the tea?" He still denied there was any in it. I told him that there absolutely was sugar in it. He got pissed.... "I PUT ONE DAMN TEASPOON IN IT. 4 Liters with ONE TSP!!! And you're telling me you could taste it!?!?" YUP.

                                                          I'm that way with venison only becuase it makes me sick unless I am the one that cooks it. I know that makes no sense, but it's true. My ex-husband made me spaghetti one night before we were married and I asked if it was venison. He told me know. It was only AFTER I ate it and was laying on the couch with severe stomach cramps that he came clean about it. He thought it was all in my head until he saw it with his own eyes.

                                                            I can only eat the tenderloin steaks and then they have to be completely devoid of fat, and I have to cook them MY way!

                                                            Sliced VERY thin, Season the HE!! outta them, melt some butter in a cast iron skillet and quick fry them for about 3 minutes per side.
